Dark soya chunk and Brinjal curry!

This is one of those simple curries which suits any day!

# Ingredients

List Quantity
Dry soya 250g
Brinjal (cut in halves) 100g
Cooking oil 10 ml
Onion (chopped) 1
Tomato (chopped) 1
Ginger garlic paste 1 tsp
SVS all in 1 curry mix 3 heaped tblsp
Curry leaves 1 stem
Salt to taste

Soak chunks in cold water for 15 minutes, drain excess water and marinate with 2 tblsp all in 1 curry mix and ginger garlic paste. Leave aside to stand for 15 minutes. In a thick based pot fry onions until golden, add tomatoes and cook through, add remaining 1 tblsp SVS all in 1 curry mix and stir. Add marinated chunks, salt and cook for 5 minutes stirring and adding water as needed. Add Brinjal and cook for a further 5 minutes, allow to simmer and serve with basmati rice and sambals.
