Braised mutton is a delicious and rich dish with amazing flavours and is considered one of the best spicy dishes out there!
|mutton (cut into pieces)||1kg|
|onions(sliced in rings)||3|
|tomato (sliced in rings)||1|
|potatoes (cut in quarters, food coloring optional )||3|
|oil (for braising)||10ml|
|SVS Madras style Braise Masala||4 heaped tblsp|
|ginger garlic paste||1 tblsp|
|curry leaves||1 stem|
|A few stems fresh green thyme|
|Salt to taste|
|Small pot oil(for deep frying)|
Rinse mutton well, drain excess water and marinate with SVS Madras style Braise Masala, Salt and ginger garlic paste, allow to stand for 10 minutes (optional - leave overnight in refrigerator for best results). In a thick based pot, heat oil and fry marinated meat adding thyme until almost crispy. Place onion rings tomato rings and curry leaves over, add a little water and cover with a pot lid, let this steam cook for 5 minutes. Remove the lid and stir, allow onion and tomato to melt down for a further 10 minutes or until excess water dries up and meat combines into a dry braise and oil surfaces. In a small pot, fry potatoes and add the fried potatoes to your braised mutton, toss and serve with roti and salad.
